Zucchini cakes-my mom's recipe...wonderful summer side dish

  • Place shredded zucchini in colander.
  • Squeeze as much liquid out as possible.
  • Sprinkle zucchini with salt.
  • Set aside in large bowl.
  • Saute onion in butter, drain and add to zucchini.
  • In seperate bowl mix eggs, flour and pepper.
  • Add wet mixture to zucchini, stir well.
  • Drop mixture into rounded teaspoons, into well oiled frying pan, flatten slightly, cook 4 minutes on each side.

  2. Loved this...did not know that I liked zucchini so well!! Used italian seasoning as suggested by another reviewer.
     
  3. Holy smokes! I wish I'd taken a picture. So good! Ok, added garlic salt, paprika and italian seasoning. I served them with Greek Tzaziki sauce and they were gobbled up by my family and the guests. The trick is to make them thin so the zucchini gets cooked all the way through and is not not mushy. Oh, one more note, I got a lot more water out after letting the zucchini sit after adding the salt.
     
  4. So good... I have so much zucchini in my garden! I added a dash of italian seasoning and a dash of garlic powder. They were wonderful. My kids ate them up!

I have lived in Oregon all my life..I really enjoy it here. I work for a school kitchen and we serve around 390 students daily.It is quite challenging. We have to be quite creative, because in our curriculum, there can be no addition of sugar to anything, we have very strict guidelines to follow. There is just two of us who work in this kitchen, it is extremely hard work, but very gratifying. I have one child and she is 6 yrs. old..divorced, but in a loving relationship of 3 yrs.
