  1. Pre heat oven to 350.
  2. In large bowl, mixed dry ingredients together. In separate bowl, whisk eggs and apple sauce.
  3. Add wet ingredients to dry ingredients, mix until dry ingredients are well incorporated (will appear very dry, like a dough.).
  4. Add zucchini, carrots, citrus zest; mix well.
  5. Pour into greased baking pan. Bake at 350 until center is done, about 90 minutes.
