- 2 lbs zucchini, sliced
- 1 tablespoon olive oil
- 3 tablespoons flour
- 2 teaspoons double-acting baking powder
- 1 teaspoon dried basil
- 1 teaspoon dried dill
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 3 large eggs
- 1 cup 1% sour cream
- 1 cup grated extra-sharp cheddar cheese
- 4 slices chopped bacon
- 1⁄2 cup grated cheese (any type)
directions
- Lightly grease a medium casserole (approx. 3 qt.).
- Preheat oven to 350°F.
- Saute zucchini in oil till lightly brown -- set aside.
- In a small bowl combine the flour, baking powder, basil, dill,salt and pepper.
- In a seperate bowl beat eggs and sour cream -- blend well and add the zucchini mixture mixing well.Stir in the cheese and mix gently.
- Turn mixture into prepared casserole.

prepare topping:
- Cook bacon until cooked but not crispy.drain.
- Add to casserole with grated cheese and bake at 350F oven for 40 mins.Let stand 10 minutes before serving.
