Zucchini Casserole

  • Lightly grease a medium casserole (approx. 3 qt.).
  • Preheat oven to 350°F.
  • Saute zucchini in oil till lightly brown -- set aside.
  • In a small bowl combine the flour, baking powder, basil, dill,salt and pepper.
  • In a seperate bowl beat eggs and sour cream -- blend well and add the zucchini mixture mixing well.Stir in the cheese and mix gently.
  • Turn mixture into prepared casserole.
  • prepare topping:

  • Cook bacon until cooked but not crispy.drain.
  • Add to casserole with grated cheese and bake at 350F oven for 40 mins.Let stand 10 minutes before serving.
