Directions

  1. Preheat oven to 375 degrees.
  2. Coat an 8x8-inch baking dish with non-stick cooking spray.
  3. Squeeze zucchini between paper towels to remove excess moisture.
  4. In a small skillet, heat oil; saute onion until tender.
  5. Transfer to a large bowl. Add zucchini and remaining ingredients except tomato sauce. Mix well.
  6. Pour into prepared baking didh. Spread tomato sauce evenly over top.
  7. Bake 30 minutes.
  8. Serve hot.
