Zucchini & Cheese Patties

"This is a great basic recipe for zucchini patties. We love them just like this but you can adjust to your taste by adding garlic, chili powder or even grated carrots. We love dipping them in sour cream too. ENJOY!"

  • Mix the first 5 ingredients together.
  • Next, mix in the shredded zucchini.
  • Drop by spoonful into butter or cooking oil.
  • Fry until golden brown on both sides.

  2. These were really good and so easy to make. They cook up so light and fluffy, too. DH kept taking "just one more." We're going to spice them up with some paprika and other seasonings next time we make them...just for the fun of it. These are definitely a keeper. Thanks for posting.
     
  3. Great recipe! I had some shredded zucchini leftover from another recipe, so decided to make this. Very quick to put together and would make a great star for a meatless meal (or a nice side dish). I honestly wasn't expecting too much, but we both enjoyed. I added a dash of garlic powder--next time might add some minced fresh garlic. Thanks so much for posting!
     
  4. A friend gave us some zucchini, and I wanted to find a recipe that I thought my father-in-law would like. This fit the bill and my husband liked them as well. The only change I made was to use a Mexican style cheese mixture because that's all I had on hand. Worked great! Thank you.

I used fresh garlic and dried chives instead of fresh onion and added a tsp of italian seasoning. There seemed like a lot of liquid before I added the bisquick but they worked out great. I will make these again, thank you

  3. Just had to try this! Super! I doubled the recipe, added shredded carrots, dried onions instead of fresh and added olive oil to the mixture before I dropped a large spoonful for each pattie on my grill. They were crunchy on the outside, creamy on the inside. Some ate the homemade applesauce on top and some had margarine. Delicious. I shredded the zucchini in a square metal shredder and it wasn't as coarse as I wanted but next time I will try the cheddar cheese. Thanks for posting Merlot.
     
  4. YUM-O! These were so tasty! I added a dash of parmesan and a little parsley for color. I used yellow squash instead of zucchini, and they were so good! Zucchini would be even better...but the yellow is what I had on hand. They are such light and fluffy little veggie pancakes. This will be used often! Thanks so much for posting an easy and delicious recipe!
     
  5. Yum! What a great recipe. I added garlic, and will probably add italian seasonings next time, to kick it up. DH requested more onion too. I used Bob's Red Mill Low Carb baking mix in place of Bisquick- it worked great! Thanks for the recipe- easy to follow and tasty, and I can see that it could be very versatile.

Hubby and I were fortunate enough to be able to retire early and now enjoy traveling in our motorhome :) . Our travels have taken us all over this great country of ours and meeting new and exciting people along the way is an extra bonus. We are blessed. We usually alternate between Florida Keys and Arizona for the winters. The rest of the year, you can find us just about any place. We love our home on the lake, but there is a bit of gypsy in us both and we hit the road as much as we possibly can. I subscribe to Taste of Home and own EVERY Southern Living Annual since 1979. I guess my biggest pet peeve is people who are negative all the time. Because I enjoy life so much, I try to avoid such people. Life is too short.
