ingredients
- 1⁄2 cup shortening
- 1⁄2 cup sugar
- 1 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 3 cups grated zucchini
- 1 teaspoon baking powder
- 1⁄2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1⁄2 teaspoon salt
- 3 1⁄2 cups flour
- 1 cup nuts, chopped
- 1 cup dates, chopped
directions
- Cream together the shortening and sugars. Add eggs and beat well. Beat until fluffy.
- Stir in zucchini. Add dry ingredients. Add chopped nuts and dates.
- Drop by teaspoonfuls into greased cookie sheet. Bake at 375 degrees for 12-15 minutes.
- You can substitute chocolate chips or raisins for dates.
