Zucchini Couscous

"A very quick and easy side dish. It could also double as the base for a cold salad with the addition of other chopped veggies and oil based dressing!"

  • Cut zucchini into 1/4-inch dice.
  • In a large non-stick skillet cook zucchini in oil with cumin and salt and pepper to taste over moderate heat, stirring until just tender, about 5 minutes.
  • Add water and bring to a boil.
  • Stir in couscous and remove skillet from heat.
  • Let mixture stand, covered, for 5 minutes.
  • Fluff couscous with a fork.
  • Cover for 5 minutes.

  1. I tried this over the weekend and found it to be a wonderful recipe that accompanied grilled chicken. I'm a cumin lover and it added a wonderful flavor to this side dish. I added some red pepper flakes and 3 cloves of minced garlic to the oil before adding the zucchini and would encourage any spice and garlic lover to add this also. Great one Yooper - it's a keeper!
     
  2. I loved this recipe. I added some carrots and tomatoes, and probably could have added even more veggies. My son and I gobbled it up, but my husband wasn't a fan.
     
  3. The whole family loved this. Added some chopped sun-dried tomatoes and a bit of chicken broth to the liquid. Served it with baked chicken thighs that had been marinated in garlic, lemon juice and fresh thyme.
     
  4. This was an easy recipe that made a great lunch for me and my husband. I added 1/2 c. chopped onion and 1 t. minced garlic and sauteed in oil, then I added zucchini and seasonings. The cumin flavor was good and my husband squirted Tabasco all over his. I may add some sliced mushrooms next time. Yooper, thanks for a great recipe.
     
  5. This was so fast and easy. I had lots of zucchini from the garden and just found another way to use it. The cumin gave it so much interesting flavor and it was ready in no time. Served it to company and they raved about it as well. Thanks.

Tweaks

  1. I prepared this as a side with Recipe #94195. Both recipes were very easy and let me put a great meal on the table with minimal effort. I did use broth instead of water for the couscous, and feel that some salt and pepper (which I added at the table) would definitly benefit the recipe.
     
  2. It was pretty good - but although I usually like cumin, I really didn't think it did much for this dish. Next time I would leave it out, and add minced garlic to the pan while cooking the zucchini. I think I might also use some chicken stock or broth instead of water too.
     
  3. I changed this a little. I had a squash medley in the freezer that I used that had onion and tomatoes in it. I sauted it with garlic and the cumin. Then I added chicken broth instead of water. Very yummy!
