  1. Grate the zucchini with a cheese grater or food processor. Add salt and squeeze the excess liquid out of the zucchini and then dab with a paper towel.
  2. Slice the onion into small chunks and add it to the zucchini. Also add the eggs, Parmesan cheese and flour to the same bowl and mix until evenly incorporated.Sprinkle the spices on top and add salt & pepper to taste.
  3. Heat the coconut oil in a large skillet. Scoop a tablespoon of the mixture and pan fry until golden (aprox. 2-3 min on each side).
