  • Cut the zucchini in half length wise, making certain to cut off the tops and bottoms to keep them stable.
  • Slice tomatoes into small 1/8" in thick slices.
  • Brush the faces of the zucchini with olive oil.
  • Top with tomatoes slices.
  • Sprinkle with salt, pepper, and garlic powder.
  • Cover with mozzarella cheese.
  • Bake at 375 for 25 mins (as oven settings can vary the time can as well from 20-30 dependent on your own personal tastes.) When the zucchini just begins to soften remove from oven.
  • Sprinkle with rosemary.
  • Allow 3-5 minutes to cool before serving.
