Directions

  1. Chop or partially puree tomatoes to your liking.
  2. Heat oil in large pan.
  3. Add onion and celery, saute for about 10 minutes or until onion and celery are soft.
  4. Add zucchini and cook until soft.
  5. Add tomatoes, sugar and salt.
  6. Bring to boil, and turn down to a simmer.
  7. Simmer for 30 minutes.
  8. Cool and pack into freezer containers.
  9. Freeze up to 3 months.
