"My GF (Dolly) had given me this recipe and of course I had to give it my touches(tweaked). This is a great way to use all those extra zucchini you have growing out in that garden of yours!   • Preheat oven to 425 degrees.
  • Cook zucchini slices in boiling water until barely tender, about 2 minutes.
  • Remove from stove and drain very well and cool.Remove as much moisture as you can with paper towels.
  • In a bowl, toss zucchini with sugars, cinnamon, nutmeg, cardamom, cream of tartar, cornstarch or flour, and salt until well coated.
  • Place lightly floured pastry in a 9-inch, pan.
  • Fill with zucchini mixture.
  • Dot with butter, drizzle with vinegar.
  • Top with crust.
  • Brush top crust lightly with water and sprinkle crust with sugar.
  • Bake for 15 minutes at 425.
  • Reduce heat to 350 and bake about 45 minutes.
  • Serve hot with a scoop of vanilla ice cream.
  • Or serve chilled.

  1. Have been making this for years and it never lets me down!! I use shredded zucchini in brownies, chocolate cake, muffins... pretty much any baked good. Adds amazing moisture to your baked items, plus the health benefits in the zucchini. Great way to use up the abundance of your garden and sneak veggies into your families diet.
     
  2. Never. N.E.V.E.R., Never ever, in a million pies, would I have believed this. Apple pie made with zucchini? Surely it would be mushy, zucchini-like tasting, fiasco. A real “told you so” moment. But, boy am I eating my words! First, my wonderful neighbor has her first garden. And the entire neighborhood gets zukes! Some were quite large. It’s just me and my husband, I was expecting one or two. We got 6! I recalled my mom talking about eating a zucchini pie, that was a mock apple pie yeeeeears ago, she didn’t have the recipe. So I found yours. Followed it as written (I didn’t have cardamom, used a bit of clove). Peeling the zucchini was easy, but felt weird. I chunked them into about 3” tall hunks and used my apple wedges cutter. (Worked perfectly. (I saved the “insides”to stuff into mushrooms later.). I parboiled the slices exactly 2 mins, strained them, laid them single layer on a towel with extra paper towels. Prepped the pan with crust. (I added about a tablespoon of the spice flour mix on the inside bottom crust) then mixed up the zukes and spices sugar. Oh my did it juice up. Spooned in the filling, topped with other crust, poured in the juice thru my pie hole and baked. (Something my aunt and grandmas always did) Smelled amazing. Looked spectacular...but how did it taste? How would it slice and serve?? Ladies and gentlemen, I’m giving you a standing ovation! Perfection! My doubting, non-baking, ultra fussy, picky neighbor devoured our sample slice. Thank you!

  3. This truly is a wonderful recipe for this pie and it tastes wonderful. The only thing I did differently, was I cooked the zucchini with all the ingredients instead of cooking it independently and then I let it sit in the fridge overnight since the pie crust had to be in there. OMGoodness, the flavors were wonderful in the zucchini! The crust is great, just like the reviews said it was too!!! I will be using the crust recipe over and over for many different things!!!!! Nice recipe!!!!
     
  4. This was so good. I hate zucchini. I always get tons of it in late summer. I can only make so much bread and the rest goes to wast. Not this year. I had a go sized zucchini. I thought I could make two pies. Nope it only made one. I can't wait to get more zucchini and make this for friend and family.
     
  5. Love this recipe. I used an apple slicer to cut my zucchini, takes out the seeds and looks like apple slices.
