  1. Preheat the oven to 350 degrees Farenheit.
  2. Melt butter with oil in a 12-inch ovenproof skillet over medium-high heat.
  3. Add zucchini and onion, and sauté 12 to 14 minutes or until onion is tender.
  4. Remove from heat and stir in 1/4 cup grated Parmesan cheese.
  5. Whisk together eggs with the milk, salt and pepper for least 1 minute, or until well blended, then pour over the vegetable mixture.
  6. Bake for 13 to 15 minutes or until set.
  7. Then, increase the oven temperature to broil, and broil 5 1/2 inches from heat for 1 to 2 minutes or until the edges are lightly browned.
  8. Sprinkle evenly with remaining 1/4 cup grated Parmesan cheese and basil.
  9. Garnish with the tomato if desired.
