ingredients
- 1 cup shredded zucchini
- 1 whole egg
- 1⁄2 teaspoon baking powder
- 1 dash salt
- 1 tablespoon sunflower seeds (for children over 4 years)
- fruit spread or mild salsa, for topping
directions
- Stir ingredients together without over-beating. Bake on a preheated griddle. Before flipping, sprinkle on sunflower or sesame seeds, if desired. Serve with fruit spread or salsa.

This was a very tender, light, fluffy, fragile pancake. I did have trouble turning it with the spatula, it fell apart. You have to watch this puffy pancake carefully so that it doesn't burn, it's worth the extra effort. I did use the optional sesame seeds and topped this gently flavored pancake with recipe #478365 it was terrific, it really made the pancake sing. A lovely balance of flavors. Thank you for sharing a recipe that I will make again often. Made for Fall Pac/12
