Directions

  1. Stir together dry ingredients.
  2. Stir in beaten eggs until moist.
  3. Fold in zucchini.
  4. Melt oleo in skillet over medium heat.
  5. Use 2 Tablespoons mix for each round. Fry 2-3 minutes on each side until golden brown.
  6. Adding 1/2 cup grated carrot makes it even more delicious.
  7. This is optional too, but I added grated onions and hot peppers to my mix.
