Zucchini-Sweet Corn-Ricotta-Quiche

- 450 g zucchini
- 150 g spinach (deep-frozen)
- 250 g sweet corn (canned)
- 50 g cheese (grated)
- 250 g ricotta cheese
- 180 g feta cheese
- 40 g dry breadcrumbs
- 200 g phyllo pastry
directions
- Grate the zucchini and preheat the oven to 180°C.
- Combine defrosted spinach, sweet corn and ricotta. Add feta cheese in crumbs as well as grated zucchini and bread crumbs. Season to taste.
- Line a pie dish with the filo pastry. Add the filling. Top with grated cheese.
- Bake for 30-40 minutes.

Lalaoula you did it aging. Very different, healthy, easy, filling, and testy. Made as writhen and unlike the privies reviewers mine held together fine. Used parmesan for the grated cheese as the recipe did not state what Lalaloula had used, think colby jack would also be good. The phyllo makes a wonderful light crust and the corn adds just a hint of sweetness. Thanks so much for the post.

A delicious quiche which I made last night and enjoyed a warmed slice of for this morning's breakfast. The filo pastry made for a lovey light crust. Having never been overly fond of corn, I used instead a combination of onion, garlic and leek, all of which I like and particularly love together. And I added some dried oregano, rosemary and sage - herbs are always essential ingredients for me! I used low-fat ricotta and low-fat feta as I've never found that the low-fat versions of the white creamy cheeses in any way compromise flavour. Since the previous reviewer had experienced difficulty with the filling holding together, I also added one egg. I'm going to be enjoying this for some take-to-work lunches. With the low-fat cheeses and so many of my favourite vegetables, this yummy quiche is a healthier food choice when one fancies quiche, so I shall certainly be making it again.
