I have been in various stages of attempting to be a Vegan since 1995. My husband, Mike, was diagnosed with Thyroid Cancer in 1987, had surgery and is now living life with vigor. After recovering from surgery, he would ride his bike 5 days a week after putting in a full day at work in a effort to improve his health. While biking, he would listen to the radio. Around 1995 a radio program by a vegan medical doctor, Dr. McDougall, was on the radio. Mike would come home and talk about what he learned in regards to the food we eat and how it affects our health. Especially the negative effects of meat and dairy products. It took me a long time to be willing to understand the truth. I loved my meat and milk and our 2 teenage sons were resistant to change too. I slowly tried new recipes and learned more about the vegan diet. Now our kids are grown and one married a vegan girl.
