My wife and I are retired; I have cooked since I was a lad. Here in Florida some of my favorites are difficult due to the weather (too hot to roast). I highly recommend Julia Child's The Way to Cook and Bittman's How to Cook Everything. The old two volume Gourmet Cookbook is hard to beat for a good foundation in the classics. The Yan Can Cook series is great for modern Chinese. Please, when a person thanks you, say "You are welcome." "No problem" is another answer altogether.
