  • Heat oil in heavy large skillet over medium-high heat. Add onions and sauté until tender and translucent but not brown, about 10 minutes. (Can be prepared 2 hours ahead. Let stand at room temperature. Rewarm over medium heat before continuing.).
  • Add lime juice to onions and simmer until liquid is slightly reduced, about 3 minutes. Season to taste with salt and pepper. Remove onions from heat. Stir in cilantro leaves.

  1. Made as written for the Quest 2014, I foresee this tasty little recipe having several creative uses. We're in avocado heaven here right now & they were a fine add to avocado chunks for a simple, but tasty side-salad w/complimentary flavors. I think they would do equally well adding flavor to pasta & other salads to give them a MOJO ingredient, so to speak. Thx for sharing this recipe w/us Agent Ev.

  4. This stuff is awesome! I cooked the onions for about 15 minutes, but was still careful to not brown them. I served them once with pan seared beef and one day with fish tacos. Yum.

I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages! I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure. So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call. What did I do wrong? Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths. I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.
