Flax seed

Though widely used to produce linseed oil (commonly used in paint and varnish), flax seed is also available in health-food stores and some supermarkets. It has a mild nutty flavor, and the seed can also be sprouted and used in salads and sandwiches. When ground into a flour and combined with liquid, the resulting mixture has a texture similar to egg whites (with no leavening effect).
