Rice vinegar

Vinegar made from fermented rice. There are Japanese and Chinese rice vinegars, and both are slightly milder than most Western vinegars. Chinese rice vinegar comes in three varieties: white (clear or pale amber), red, and black. Japanese rice vinegar is almost colorless.
