Welsh rarebit

A popular British dish consisting of a melted mixture of cheddar cheese, beer (or ale or milk) and seasonings served over toast. Its name is quite literally from the words rare (meaning very lightly cooked) and bit (a small piece or portion). Usually served as a main course or for high tea and often accompanied by tomatoes. Called golden buck when topped with a poached egg.
