Royal Wedding Cake to Be Made By London-Based Californian Baker

The spring ceremony will be celebrated with fresh citrus and floral flavors.

After many weeks of speculation, the royal wedding cake will not be a banana cake, nor will it be made of sharp cheddar cheese.

Prince Harry and Californian royal-to-be Meghan Markle have decided on dessert, which will come from Violet Bakery in east London, according to a statement. Keeping with the international unification theme that has been played with so far, the London bake shop is operated by Claire Ptak, an American expat.

Per the royals’ request, the cake will be flavored with elderflower and lemon, coated in a buttercream, then decorated with fresh flowers to represent the spring season.

“I can’t tell you how delighted I am to be chosen to make Prince Harry and Ms. Markle’s wedding cake,” said Ptak. “Knowing that they really share the same values as I do about food provenance, sustainability, seasonality and most importantly flavour, makes this the most exciting event to be a part of.”

Ptak, who was also raised in California, staged at Alice Waters’ Chez Panisse before moving to London. She opened Violet Bakery in 2010 with the principle idea of using organic ingredients and seasonal flavors.

Certain cakes and treats from Violet Bakery are available to purchase in-store, while customized versions must be ordered in advance. Cakes cost anywhere from £30 ($42) to £250 ($350).
