5 Savory Ways to Waffle Your Life

Butter and syrup are so overrated.

Most people think of waffles as a sweet breakfast dish you eat with whipped cream, butter and lots of maple syrup. Don’t get me wrong, I love a good plain waffle in the morning, but I’m here to show you that waffles don’t have to be boring — or sweet. In fact, these five waffle recipes are packed with so much flavor you won’t even miss the syrup. Be sure to give them all a try the next time you’re planning a breakfast or brunch gathering. You’ll surprise your guests and win the coolest host award.

Chicken & Waffle Breakfast Nachos

Chicken and waffles are perfect partners, just like bacon and eggs. So what happens when you combine nachos (my favorite happy hour snack) with that classic Southern favorite? You get your new favorite breakfast or brunch dish. Instead of chips as the base, these nachos are made with a bed of savory cheddar scallion waffles.

Whip up a homemade waffle batter — don’t worry they won’t be sweet — and fold in shredded cheese, scallions and jalapeño for a nice little kick. Once the waffles are cooked, cut them into bite-sized pieces and place in a platter or individual bowls. Top with a basic cheese sauce, popcorn chicken, bacon, scallions, jalapeño slices and a fried egg. Get the recipe.

TIP
If you want to save on time, try using a store-bought waffle mix and just stir in the add-ins.

Ube Waffles

If you’ve never cooked with ube, or have no idea what it is, let’s just say it’s basically a purple yam — sweet but not too sweet —  and it’s perfect for turning your food a purple hue, the natural way. These purple ube waffles are what you get when you combine avocado toast with waffles. The end result is a hip and trendy breakfast dish you’ll wish you'd known about sooner.

Start with a basic buttermilk waffle base, then fold in the mashed purple sweet potato until the entire batter turns a purple color. Cook according to your waffle iron’s instructions and then top with mashed avocado, sliced red onion, crushed red pepper flakes, a fried egg, feta and parsley. Get the recipe.

Ramen Waffle Breakfast Sandwich

Remember when the ramen burger was the most-amazing creation ever and you just had to try it? Well, I’d like to introduce you to the Ramen Breakfast Sandwich. Two ramen waffles filled with cheese, egg and bacon. Let that sink in for a second.

Who knew that you could create waffles out of cooked ramen noodles? What’s more, they’re incredibly easy to make. Once your waffles are cooked, slather each one with a simple mixture of mayonnaise and sriracha. Then fill each sandwich with a fried egg (cooked to your liking) and top with cheese and crispy bacon, of course. Get the recipe.

Green Spinach & Zucchini Waffles

Always on the lookout for a healthier waffle? It’s time to end your search, because these feel-good waffles are loaded with fresh grated zucchini and spinach. These savory green meanies are topped with a quick and easy sausage and potato hash, making them hearty, big and bold. They're also a great way to get picky eaters to eat their green veggies.

Before you make your waffles, whip up a simple sausage and potato hash by sautéing breakfast sausage with onion, potatoes, carrots, bell pepper and any other vegetable you have on hand. Once you’ve cooked your waffles, top them with your delicious hash and garnish with fresh parsley. Get the recipe.

Huevos Rancheros Potato Waffles

What if there was a world where you could make huevos rancheros, but instead of a crispy tortilla as base you have a savory waffle? What if instead of just any waffle it was a super-crispy waffle made of shredded potatoes? Well, now it’s possible and you owe it to yourself to try it.

TIP
Use whatever store bought salsa flavor you like. Try it with a classic traditional or even salsa verde. Both would be equally as good on these waffles.

This waffle base is gluten-free and super easy to make, so you don’t need to stress about being a waffle pro for a successful brunch. All you need to do is cook your waffles, then top them with a fried egg, salsa, cheese, cilantro and jalapeños. Serve with a lime wedge on the side for that perfect Tex Mex-themed breakfast or brunch. Get the recipe.
