1 SAUTÉE ONIONS & GROUND BEEF

Start by heating 1-2 tablespoons of olive oil in a large skillet over medium-high heat. Add 1 diced medium yellow onion, and sauté for 2-3 minutes or until slightly opaque. Add 1 pound of ground beef to the onions and brown, keeping the heat at medium-high.

Drain off any excess fat from the beef and onion mixture.

For a leaner meat option, substitute ground turkey for beef.

2 ADD SPICES & SEASONING

Once any excess fat has been drained from the beef, add in spices and seasoning. Add 1 teaspoon salt, 1 teaspoon paprika, 1 teaspoon onion powder, 1 teaspoon dried parsley and 1/2 teaspoon ground pepper. Thoroughly stir the spices into the meat and onion mixture.
 

TIP
For a spicy option, try adding 1-2 teaspooon of chili powder and 1 teaspoon of cumin. These spices will give the casserole a flavor likeness to tacos. Feel free to serve with your favorite taco toppings like sour cream, fresh tomatoes, lettuce, guacamole and shredded cheese.

3 STIR IN LIQUIDS, TOMATO SAUCE & PASTA

Once you've seasoned your ground beef mixture, add 1 1/2 cup milk, 1 1/2 cup beef broth, 1 (8 ounce) can of tomato sauce and 2 cups of uncooked elbow macaroni. Stir together and bring to a low boil over medium-high heat. Once boiling, reduce heat to medium-low, cover skillet with lid and simmer for 10-12 minutes. Be sure to stir occasionally to prevent the pasta from sticking to the bottom of the skillet.
 

TIP
If using other types of pasta like shell, bow-tie or penne, you may need to adjust the amount of liquid. Additionally, cooking time for the pasta may vary.

4 STIR IN CHEESE

Once the pasta is cooked, remove lid and add in 2 cup of shredded cheddar cheese. Remove from heat and stir in cheese until completely melted.

Serve right away. Top with additional shredded cheese and garnish with minced parsley, if desired.
