"These were very good. I added chopped apples, and fresh sage and thyme from the garden rather than poultry seasoning. Because I was making them for Thanksgiving I always try to make as much as I can ahead of time, so I baked them two days before, stuck them in the freezer and when needed, just reheated for about 15 minutes with foil overtop. They were nice and crispy. We did our turkey on the rotisserie in the BBQ. Turkey Pita Sandwich

"These are really good, though I'm not giving a star rating because I changed the recipe quite a bit. Our cucumbers got shoved to the back of the fridge and froze, so I skipped those. I used dried dill, lemon juice, and garlic powder in the yogurt. Then I used goat cheese instead of feta, and added some chopped pecans. Great way to use up leftover turkey or chicken!"

Turducken Roulade

"I have made this now 5 teams, at least, and it is simply superb tasting, and supremely simple to make. When you want to pound the breasts, cover you counters with a layer of plastic wrap, lay the breasts on the plastic warp, then lay another layer on top of this. This stops splattering raw juices around the kitchen, and makes cleanup easier. Note that you still MUST clean and sanitize the countertop after the dish is made. I use a bread stuffing in place of the rice stopping (really, what you want is two different stuffings), and I don't use a baking bag-I tent it in aluminum foil. The bags are expensive and sometimes hard to find, I always have aluminum foil around, and it's cheap. If the bacon does not look done, when the cooking is finished, remove from the bag or foil, and place under the broiler (NOT too close) for a couple of minutes to finish the bacon. Finally, the resting before carving is vital, as is making sure the temperature, taken in several places, is over 165°F (74°C) for reasons of food safety. Note that some turducken roulade recipes use 3 stuffings, but I find that the amount you could place inside the chicken breast is so small, it's not worth the effort making a third type of stuffing."

Brussels Sprouts in Garlic Butter

"Normally I steam the brussel sprouts then saute in browned garlic butter and sprinkle with parmesan. So I figured this was just another avenue to the same thing. WRONG!!. These are fabulous and far superior to the way I made them before. The cooking time was perfect and the brown roasty part is an excellent touch. Even with exactly the same ingredients this technique produces a much better result. Do not forget to salt and pepper liberally. At the end of cooking I did swirl in another pat of butter. Only minor problem is that if you are cooking for a crowd you will need a couple of pans. This will be my sprout standard from now on. Now I am sure I want to adopt Tracy. "

Sweet Potato Dumplings

"I made the recipe in a 9" square pan—I made half the dumplings but did not halve the sauce. They cooked in about 33 minutes. Mine were more crescent-shaped than round, which worked just fine. I took a number of suggestions from other reviewers and it turned out well. I was careful not to overlap the dumplings, used butter-flavored biscuits, halved the sugar in the sauce, substituted as much of the potatoes' packing fluid for water as I had, and added some cinnamon and sugar and vanilla to the filling. I will continue to use all of these tweaks when I make it in the future. My family loved them, but it was suggested that they would work better for breakfast than a dinner side. I think they work fine either way."

"I have made this recipe for years, but never included apple. Will do that this year. I have one thing that I add to this, that makes it just like "in the bird" stuffing. I buy a turkey thigh, or wing, or similar size piece of turkey in the fresh meat case, and put that on top of the stuffing when I let it cook. "I think I found the go-to recipe for Thanksgiving now! This recipe doesn't require basting which is great. I put a 15 lb. marinated turkey onto a gas grill and grilled it at 375 degrees for 2 1/2 hours. The bird turned out fantastic! All I had to do was to maintain the temperature of the grill during cooking. Flavorwise, I mixed 2 tablespoons smoked paprika with all the spices and herbs stated in this recipe. "This was delicious, with the cherry and almond flavors blending perfectly. I used almond extract (about half the amount of liqueur called for, since the extract is so strong). My crust didn't turn out very well; it was very hard to cut without breaking up although I used a sharp knife. The directions didn't say how to mix, so I cut in cold butter by pulsing my food processor as I usually do for pie crusts and shortbreads. It was still delicious although it didn't make for a pretty presentation when served."

Cranberry Apple Stuffed Squash

"A buttercup squash, which has a sweet creamy orange flesh that tastes similar to a sweet potato, was the perfect vessel for this flavorful stuffing. I recommend using one of the naturally sweeter varieties of apples like a Gala because a sour Granny Smith apple would be too tart paired with the cranberries. I omitted the pecans and added one teaspoon of fresh orange zest which enhanced the flavor of the frozen cranberries. Instead of cooking the filling in a saucepan, I stuffed the raw squash with the uncooked cranberry-apple mixture and baked at 350F degrees for one and a half hours since I was not in a rush. The longer cooking time really allowed the squash to absorbed the delicious flavors of the filling. Since a buttercup squash has a very small inner cavity, there was excess filling. I baked the excess filling with a little water in a small Corningware dish with a lid. After the squash was done baking, its filling settled into the cavity making room to add the rest of the separately baked excess filling. The tartness and sweetness of Cranberry Apple Stuffed Squash was the perfect side dish for my roast lamb. Thank you, Brooke the Cooke in WI, for a combining my favorite flavors of fall into a side dish that is tasty enough to be star of the show!"

"Wonderful vegetable side! I used thick sliced fresh carrots because I had lots on hand. I didn't have real maple syrup so I subbed with maple flavored pancake syrup. The aroma when you add the syrup, ginger and rosemary to the hot carrot mixture is simply divine! The glaze is so pretty and shiny immediately after cooking. I had to make this ahead of time to take to a family dinner and therefore I had to reheat it for serving. It still tasted great, but the glaze absorbed some and lost its shine. I recommend serving it immediately after glazing. Next time I will cook the carrots ahead of time but wait and add the glaze ingredients instead of doing it in advance. Perfect Turkey in an Electric Roaster Oven

"I was very nervous about cooking a turkey in an electric roaster. However, the turkey turned out better than expected. I was told best turkey ever! The only thing I would have done differently because my roasting lid was a little warped (lid didn't fit properly )I should have used a little foil to close some of the gaps. I cooked a 20.5 lb butterball turkey. put butter under the skin. Some garlic,onion and an apple in the cavity. I used olive oil, garlic powder, onion powder, salt and pepper on top of the skin. Most people in my family dislike sage, an ingredient in poultry seasoning. in 4 hrs 15min the turkey was done to perfection. I let it rest for 20min. so juicy. Still too hot to cut ( the breat was shredding.so we had to let it cool a little longer.( My mother in law said that when turkey is too hot it will tend to shred instead of slice.) After cooling a bit longer it sliced perfectly. I had tons and tons of gravy! best gravy ever! I even bought back up gravy. never had to touch it. Thanks so much for posting this recipe. I've tried this with both already cooked bacon and with raw bacon I had to cook and while I think the raw bacon you cook adds a little more flavor you could do it either way and still get fantastic results. Sweet Butternut Squash With Apples

"My kitchens culinary editing used 1 small butternut squash (remove seeds and skin, boil 1/2" cubes stovetop for 10 minutes until slightly tender). Remove liquid, stir in (and frequently thereafter) 1/2 cup fat free half & half, 1/4 cup spenda brown sugar, and 1 pealed and 1/2" cubed apple, return to simmer 5 minutes. Peel and cut 1 red pear into 1/2" cubes, cut 1 large seedless orange into 1/2" wedges, 1/3 cup dried cranberries and 1/3 cup spiced rum. I added the (fully ripe) pear, orange, cranberries and rum at one time returned to simmer 1 to 2 minutes, remove and transfer to a bowl. Slap yo' Momma good. Capt'n Morgan will want to trade some rum for this recipe."

"Love these muffins! With the exception of subbing the oil for coconut oil and extra zest, I made it exactly as described. Tart, with just enough sweetness. Cranberry Brie Bites

"These were FANTASTIC! They were simple to make and impressive enough that people thought I spent a lot of time on them! The people who were less-adventurous and had never had brie, were so surprised that they liked something new! Haha. After making them once as-is, I experimented with them some-- you can use the exact same recipe and substitute Lil' Smokies cut in half for the cranberry and they make an awesome savory bite. Another thing-- you can use Pillsbury croissants (in a can) if you can't find puff pastry!"

"Delicious! A nice change of pace for all my leftover stuffing! I added corn and cheddar cheese and used a cookie dough scoop to form evenly-sized balls. My family really liked them!"

Brie Bread

"Wow, this recipe was great!! I did not have any basil, so I used dried parsley. I did not have 6oz of brie, so I put 1/4 cup mozzarella cheese and about 2-3 oz of cream cheese in the pan. I mixed and melted. The butter did not mix well with the cheese. I put the mixture on the french bread and broiled it. It still turned out wonderful. Thanks!"

Pumpkin Crunch Mini Muffins

"Mmmm... These muffins are not too sweet and wonderfully moist. The directions were simple and spot on. I was worried that perhaps the 1 Tablespoon of baking powder might be a typo, but since this recipe already had a great review on it, I held true and it worked great! The batter is very airy and I feel that this is what takes the pumpkin to a very delicate texture. We loved the brown sugar topping, it was great! I used Sunmaid fruit bits which has cranberries in and next time I will add some chopped pecans too. I also used regular sized tins and got 12 muffins in 18 minutes. Thanks for sharing this keeper recipe. :)"
