- 1 tablespoon vegetable oil
- 3⁄4 lb pork tenderloin, cut into 1/8 inch strips
- 2 (3 ounce) packages pork-flavored ramen noodles
- 1 1⁄2 cups water
- 1 medium red bell pepper, sliced into thin strips
- 1 cup broccoli floret
- 4 medium green onions, cut into 1 inch pieces
- 1 tablespoon fresh parsley, chopped or 2 teaspoons dried parsley
- 1 tablespoon soy sauce
directions
- Heat skillet or wok over med-high heat; add oil and rotate skillet to coat.
- Add pork and stir fry 5 min or until no longer pink.
- Gently break apart noodles; add to skillet along with water, seasoning packet, and remaining ingredients.
- Heat to boiling; boil 3-4 minutes, stirring occasionally until noodles are softened.
- Diet exchanges: 2 starch, 3 lean meat, 1/2 fat.

This was way better than what I was expecting. Most of the prep time is in whatever veggies you choose to chop. I added bok choy and cut back a little on the broccoli. I also used peanut oil and a little dark sesame oil. I chose to cook the veggies after the meat, but before adding the water, cause I don't like my veggies too uncooked. I cubed up some tofu and threw that in. Next time I will use the packaged shredded carrots and maybe some fresh ginger and any other leftovers ;-) I doubled the recipe and fed about 6 people. This is a keeper. Thanks for posting a truly easy and fast recipe!

I have made this twice, once using fresh chicken that needed to be used and another time using slices of Recipe #269360 from the freezer. I also used frozen veggies (an Asian-style mix) which worked perfectly. My own broth instead of the packet, to reduce sodium, and fresh parsley and Thai basil to round it out. Fast and easy, especially if you keep key ingredients in the freezer and pantry - my kind of recipe for a busy weeknight!
