5 Cup Salad

"This is quick and easy to make for that last minute "have to take something" and always gets wiped out. I have a really hard time keeping my family out of it long enough to cover it and put it in the refrigerator. We like to save the drained juices for a refreshing beverage."

  • Toss pineapple, mandarin oranges, marshmallows and coconut lightly together.
  • Fold in Cool Whip.
  • Serve immediately or chill in refrigerator for later.

  1. What a great fruit salad! So light and refreshing. I made this exactly as you stated except I added a few green grapes just because I had some on hand and wanted to use them up. This is so easy to make. Something I plan on making many times over again. Thanks so much for sharing this lovely salad.

  5. A light, delicious way to serve canned fruit. I made ahead 1 day and it kept well in refrigerator. I did drain fruit and then drained again on paper towels. I added 1/8 tsp cinnamon and 1/8 tsp. nutmeg to dressing. A brunch of 12 people rated it as very, very good - 5 star! I will make this again.

  1. Feel free to substitute fruit cocktail or other canned fruits of your choice for the pineapple.
     
  2. So quick and yummy! It is also good with fruit cocktail instead of pineapple; and if you're not a fan of coconut you can skip it and it still tastes great.
     
  3. My family has this for Thanksgiving, Christmas and various get-togethers during the summer. We use sour cream instead of Cool Whip and it is SO good! Best to make it the night before so the flavors meld together. The sour cream and fruit juices soak into the marshmallows a bit... YUM!

I am currently a stay at home Mom and wife (aka: homemaker, domestic engineer, chauffeur, etc.). My husband and I made this choice about 2 1/2 years ago. At the time I was averaging 72 hours/week +. Our kids were complaining that they never saw me, and one of them was even getting in trouble (too little supervision apparently). We got the troubled teen through high school, and she is currently preparing for college. Things have improved a lot so I am considering going back to work part-time while the kids are gone to school (if the right opportunity presents itself). <br> <br>I love to cook, especially trying new recipes. I get tired of the same ol', same ol'. I also love reading cookbooks and the history of recipes. I always hated doing all the dishes afterwards, so I did a lot of one dish meals whenever possible. Recently, my husband bought me a new dishwasher, so now I am cooking up a storm! Everyone is loving it. <br> <br>I look forward to making new friends in Recipezaar, trying out new recipes, and hope some of you will try some of mine. Please, if you try my recipes, take time to post a little note telling me about your experience and any modifications you may have made. I just love to experiment and try new things in the kitchen! :-))
