5-Part Potato Pie “#5FIX”

ingredients
- 18 ounces of chicken corn chowder (I used Progresso)
- 15 ounces of freshlike mixed vegetables
- 1 premade pie crust (you can find in your frozen section)
- 1 (24 ounce) package Simply Potatoes Traditional Mashed Potatoes
- 8 ounces of shredded sharp cheddar cheese
directions
- Preheat oven to 400.
- Pie crusts come in packages of two, so put them both out on your counter.
- In a small bowl, mix the corn chowder and mixed vegetables.
- Once mixed up, put half into each pie plate, it should fill about half of the pie crust.
- Top each pie with dollops of potatoes to cover.
- Place in oven for 30 minutes.
- Put shredded cheddar on top and cook another 10 minutes.
- Let stand for 15 minutes to allow for neat plating- the cheese will try to hold things together but we all know cheese has its limitations.
- Season to taste.

<p>I love to cook! But I don't do the weekday cooking, that is done by my awesome wife. I cook on the weekends and especially on our 'cheat day'- meaning every Sunday as we adapt to this low carb life. We have been doing this for a while and we really love to get those heart-stopping, brain-freezing receipes that low carbers crave throught the week. </p>
