  1. Sauté onion and garlic for about 5 minutes in peanut oil over medium heat.
  2. Add whole peeled tomatoes (and their juice), tomato paste, sugar, ½ amount peanut butter, broth, vinegar, and cayenne. Whisk to combine and bring to a boil.
  3. Add rice, reduce heat to low, cover, and cook 15 minutes until rice is tender.
  4. Stir in remaining broth and reserved peanut butter. Bring soup back to a simmer for 1-2 minutes.
  5. Ladle into bowls and garnish with chopped spring onions and peanuts.
