Amish Oven-Fried Chicken

"This is a great way to "fry" that chicken without all of the splatter on top of the stove. A good recipe, and I think it is good cold too."

  • Place oil and butter in a shallow cooking pan and place in 375ºF oven to melt butter, set aside.
  • In a large paper sack, combine dry ingredients.
  • Roll the chicken pieces, 3 at a time, in butter and oil then drop into a sack and shake to cover.
  • Place on a plate until all pieces are coated.
  • Leave any excess butter and oil in pan.
  • Place chicken in the pan skin side down (or its just as good if you remove all the skin first).
  • Bake at 375ºF for 45 minutes.
  • Turn chicken pieces over and bake 5 to 10 minutes longer or until crust begins to bubble.

  1. This is wonderful. Tender, moist, browns nicely and has great flavor, also, it is quick and easy. I did use only a dash of pepper in place of the 2 tsp., only due to the fact I don't like pepper. This will be a definite repeat.
     
  2. This was pretty good, but I found that there was too much butter/oil for my tastes. Next time, I will halve the butter/oil and see how it goes.
     
  3. Hey, Miss Annie! Your recipe has just saved me from the drudgery of frying chicken. We love fried chicken, but I hate fixing it cause it's just so messy and seems to take forever. I had given in to the fact that Popeye's and Church's make better fried chicken than I do anyway...LOL! We love your version of oven "fried" chicken. Thanks bunches from one Texan to another!!
     
  4. This was so good that I was requested to make it two nights in a row! I only used two bone-in breasts so I used my eyes to measure accordingly. The second night I just added Montreal Steak Seasoning to the flour and it was delicious with even less effort. We really enjoy that seasoning so I will continue to use this cooking method but with that seasoning. THANK YOU!

  1. I tried this recipe for the first time and, although I had expected to have a crispy chicken, it didn't seem to crisp up. I used part fine bread crumbs with the flour but the results weren't quite what I'd expected. The flavor was awesome though. I made this chicken dish for a friend who's going to the hospital to deliver her 9th baby tomorrow and I sure hope they enjoy my efforts, along with orange ginger carrots and rice recipe I found on another site. I will be trying this recipe again, however. Thanks for posting.
     
  2. Wow! Awesome chicken. I used olive oil in place of the vege oil and cayenne pepper instead of marjoram. Only change I will make the next time (and there will definitely be many next times for this one) is to pour the majority of the extra oil and butter from the pan before adding the chicken to bake - especially if I use chicken thighs again because they put off a lot of their own fat. It was so good I got up this morning and ate a piece of leftover chicken straight from the fridge... mmmm UPDATE: Made this a second time to take on a camping trip - chicken was wonderful again and my boyfriend loves it even better cold.
     
  3. Delicious. I added extra garlic for our taste and it was just right. Also, for the gluten-free family members, I substituted buckwheat flour for the white flour. Thank you for sharing.
     
  4. This is a good recipe, but the coating would not stay on the chicken. I used skinless breasts, so maybe that was the problem? I used coconut oil in place of the vegetable oil. The chicken was tasty and very good cold in sandwiches the next day. Thank you for sharing.
     
  5. Wordeful chicken! I used only 1/3 cup of olive oil and oregano instead of marjoram and baked in 200C for one hour. Everyone loved it! Thanks so much!
