  • Preheat oven to 375.
  • In a large bowl, combine flour, sugar, brown sugar, baking powder and cinnamon. Mix together.
  • Add all remaining ingredients and stir until flour mixture is moistened.
  • Spoon batter into 2 greased or paper-lined 12-cup muffin pans.
  • Bake at 375 for 19-23 minutes or until lightly browned. Cool for about 5 minutes before removing from pan.

  1. These were very good. I made some healthier changes and my kids still enjoyed them. I used all whole wheat flour, 1/2 c each of the white and brown sugar, and 1 c applesauce in place of the melted butter. They were very tasty! I also liked that this muffin recipe made more than the usual muffin recipes.

  3. YUMMY! If you run into a guy with tattoos and a shaved head who asks you to marry him, just send him back home -- I'm already married to him. He only had one complaint -- they weren't big enough. Men! I made these as directed and we both love them. I was toying with the idea of topping them with a streusel type topping, but I doubt I'll change a thing. Thanks so much.
     
  4. I make Muffins weekly for an elderly friend, so I have acquired a lot of muffin recipes. This has become my favorite!! I use 3 granny smith apples, add 1 extra tsp. cinnamon & 1 tsp. vanilla. I fill muffin well to top. I get 16 large muffins, baked for 23 minutes. They are perfect! Very moist, the apples are cooked just right, soft but not mushy. Easy, quick to make, & delicious warm or cold.
     
  5. I generally love the goodies I fine at Genius Kitchen, but I don't feel the desire or need to revisit this one. It was so-so. Muffins turned out flat and needed about 8 additional minutes to bake. They were a bit too sweet and could use a more cinnamon. That's it. Sorry guys. I'll research other recipes instead of trying this one again.

  3. The recipe is great, but I am fond of cinnamon. I resisted the urge to add an extra teaspoon of cinnamon. I wish I hadn't. :-) Three teaspoons of cinnamon would be even better.
     
  4. Ised only 1 cup sugar total. 1/2 brown, 1/2 white. Used 1-1/2 tsp baking powder and 1-1/2 tsp baking soda. Gave the tops a very nice rise. Chopped two medium Gala apples and grated one half more. Added 1 tsp vanilla, 1/4 tsp Chinese five spice, a few dashes of allspice and added a streusel topping.
