Apple Cranberry Muffins

"These muffins are part of our Thanksgiving tradition. Since we have many dishes for this holiday, I often make these muffins in mini-muffin pans and bake them only half as long."

  • In a large bowl, mix flour, baking soda, cinnamon and salt together.
  • In a medium size bowl, whisk eggs, sugar, oil, sour cream and vanilla until smooth.
  • Stir apple, cranberries, and walnuts into wet mixture.
  • Fold wet mixture into dry ingredients.
  • I use an ice cream scoop to measure batter into greased muffin cups .
  • Bake at 350 degrees for 20 to 25 minutes.

  1. Thanks for a delicious and flexible recipe! I used whole-wheat flour, added 1/4 c ground flax, apple sauce instead of oil, yogurt instead of sour cream, and 1 cup each of apples (1 large Cortland) and cranberries. My only change would be to double the cinnamon. These will definitely be remade.

  3. A great tasting simple muffin recipe.I used whole wheat flour instead of white.I also added 1/4 cup of flax and 1/4 cup wheat germ.I also omitted the salt.
     
  4. I love these muffins! I was looking for a muffin that didn't use too much sugar ~ I subbed Splenda brown sugar blend for the regular brown sugar and it worked perfectly. I used pecans because that's what I pulled out of the freezer and toasted them up in a dry frying pan on my cooktop. The muffins are very moist and I love the combo of cranberries, Granny Smith apple and toasted pecans. The recipe made 12 muffins just as stated. Thank you for posting a keeper!
     
  5. Very good muffins. I did not have sour cream so I used evaporated milk with very little vinegar mixed in just to sour it. Seemed to work. I also used apple sauce for the oil. I divided the batter in half and add walnut to one and almonds in the other both were very good. I do think I could have added a lot more cranberries. Will make again. Thank you for the recipe.

I am the mother of 6 (only 5 of whom I birthed), and the grandmother of 10. Since my children were born in ’70, ’73, ’80, ’85, and ’90, I have always had kids in different stages of life; so my life has never been boring. I homeschooled the youngest 3 for 15 years(which I really really enjoyed), but my youngest daughter is now going to the University of Hawaii. The next oldest daughter is a theater manager and English teacher in Seattle. Our 4 sons are are all merried, living in West Virginia, Nevada, and Oregan and are the parents of all our grandchildren .I did the Cub Scout leader a long time ago; then the Girl Scout leader and like that a lot better. I also love to garden and to cook. I started cooking in grade school, was fixing dinner every night as my “family chore” by the time I was in junior high, and have been enjoying it ever since. I think when you enjoy cooking, it is contagious. My married sons both share some of the cooking with their wives; my college daughter has enjoyed putting on Sunday Suppers in her dorm. Reading is also a favorite pastime, but my “reading” is done via books on tape since I am legally blind. I love Zarr because it allows me access to so many recipes, as well as the benefit of others’ experiences (thanks to modern technology and a specialty computer software program designed for the blind and visually impaired. My husband (DH is an understated term) and I are involved in our church choir together, enjoy traveling, visiting friends around the country, and taking our grandchildren and Girl Scouts camping.
