  • Beat together white sugar, oil, and eggs for 3-4 minutes; set aside.
  • Sift together flour, soda, salt, and cinnamon.
  • Add vanilla and egg-sugar mixture.
  • Stir until mixed.
  • Fold in apples and nuts.
  • Spoon into 2 greased and floured 5x9-inch loaf pans.
  • Bake 1 hour at 325°F until toothpick comes out dry.
  • Stir together remaining ingredients over low heat until smooth and pour over hot loaves.
