  • Preheat oven to 350 degrees F. Grease a 12 cup muffin pan. Place butter, sugar, flour and egg in a bowl and beat with an electric mixer until smooth and pale, about 2 to 3 minutes. Stir in applesauce, cinnamon, pecans, and raisins.
  • Spoon batter into cups, lay apple slices on top and sprinkle with sugar.
  • Bake for 25 minutes, remove from oven and let sit for 5 minutes, then remove from pan and let cool on wire rack. Serve warm.
