Ok, I haven't made a layer cake in a hundred years...but thought this would be a good day to try this recipe. Man oh man!!! What a fantastic cake! And it came out BEAUTIFUL! I was so pleased. Simple to put together, I did double the spices, I'm a spicy girl, yea right..LOL and it was perfect. Iced with cream cheese frosting. This will be a favorite around here. Thanks for sharing with us.

This cake is delicious. It turned out moist and flavorful; the apple flavor really shines through. I attempted to make the cake recipe as stated with no alterations, only to discover 10 minutes into baking that I had forgotten to add the raisins and nuts. I baked it in a 9x13 pan for 31 minutes. I used a cream cheese icing which complemented the cake perfectly.

I needed to clean out the fridge and use up some applesauce, this was a great recipe to do that with. Next time I will increase the spices just a bit. Frosted this with a caramel topping and am giving it to a friend who is a student with four hungry teenagers. I'm sure it will be gone before tomorrow.

I love cooking and trying different foods, but my favorite cookbooks are now Weight Watchers or low fat/low cal cookbooks as I tend to try and make low fat/low cal recipes. I lost over 90 pounds on Weight Watchers and have maintained for over a year now -- so my cooking/eating habits have changed drastically following my weight loss and to keep it off!
