Pineapple-Apricot Sauce

"From The Ultimate Diabetes Cookbook and recommend to go with recipe #278208. As put in the instructions the timing of the microwave method will depend on the wattage of your microwave but unfortunately I couldn't find in the cook book any reference to what wattage oven they used. times are estimated and have based them on the conventional method.."

  • 1 14 cups pineapple juice (natural, NO ADDED SUGAR)
  • 14 cup caster sugar
  • 2 tablespoons orange juice
  • 12 teaspoon cinnamon
  • 14 cup water
  • 12 cup apricot (dried and diced)

directions

  • Conventional Method:-.
  • In a medium sized saucepan combine the pineapple juice, sugar, orange juice and cinnamon and add the water and heat until boiling and then stir in the dried apricots.
  • Reduce the heat, cover and simmer for 10 minutes and allow to stand for 5 minutes.
  • Pour into a blender and blend until smooth and thickened.
  • Microwave Method:-.
  • Place the apricots, pineapple juice, sugar, orange juice and cinnamon in a medium sized microwave safe container and stir in the dried apricots.
  • Cover and cook on HIGH (100% for 6 minutes, stirring once and then allow to stand for 5 minutes).
  • Pour into a blender and blend until smooth and thickened.
  • Please note for the microwave method it will depend on the wattage of your microwave.

I thought the pineapple juice might overpower the taste of the apricots, but it didn't (then, again, I used a very rounded half cup of the fruit)! Thanks for this nice keeper recipe! With the demise of the forums and with no more interaction on site with what was a great community and it was a pleasure to get to know so many of you over the years and to have had the privilege of meeting some of you in person. For me now this is just another recipe site like to many on the net, it has lost its specialness, such a pity especially when Scripps changed the name from Recipezaar to Food.com and made this statement sorry cannot replicate here as considered invalid but they basically said yes the community was valuable hence .com was short for community but it was a pack of lies as they were not willing to put the money into that community and got rid of the forums which was the community so for .com has become .crap.
