  • Steam asparagus until tender crisp, drain and pat dry.
  • In a large skillet, heat olive oil.
  • Add the asparagus, tomatoes, garlic and salt and pepper.
  • When vegetables are lightly browned, sprinkle them with lemon juice and serve hot as a side dish or cold as a salad.

  1. Mmmm...delicious! I usually just roast asparagus, but this was a great change. I love the addition of cherry tomatoes and garlic. It reminded me of bruschetta. Thank you for sharing.
     
  2. So glad I made this! Quick, easy, and irresistable flavor. I used a large chopped tomato and extra garlic, and sprinkled with celtic sea salt, my fave :-) I plan to repeat this with the other batch of asparagus I got on sale. Thanks Oolala!

<p>I've collected recipes since I was a teen. After all these years I'm trying to get all my index cards and clippings, that still sound interesting to me, posted here so that I can find them and eventually make them! <br /> <br />I've posted some of my Mom's recipes. You've enhanced my cooking skills and expanded my horizons! I've learned so much. <br /> <br />For fun, I also like to read fiction, travel, see movies and shows, shop (and I love to browse thrift shops and rummage/garage sales for cookbooks, etc.). <br /> <br />The discovery of a new dish does more for the happiness of mankind than the discovery of a new star Brillat-Savarin</p>
