Asparagus & Tomato Salad

  • Blanch asparagus briefly in boiling water on stove top, then plunge into ice cold water to stop them from cooking.
  • Chop asparagus into bite sized pieces.
  • In large bowl combine asparagus and tomato.
  • Add basil, sea salt and pepper.
  • Stir in feta, toss, and refrigerate.
  • Before serving, toss with balsamic vinegar.

  1. I served this salad with a traditional Christmas dinner (turkey, ham, etc) and not only was it festive in appearance, but delicious! I received many raves. I made too much, though, and it really tasted best up to a day left over when it is fresh. Thanks s'kat.
     
  2. This salad recipe includes so many of my favorite foods. I cooked the asparagus until it was crisp-tender. I wasn't sure how I was going to like feta cheese, but I did. Been missing out all this time. The balsamic vinegar is the crowning tough. Thanks s'kat. Great recipe.
     
  3. Some of my favorites come together to make a deliciously different salad. It is very easy to put together and with it being made ahead of time is a wonderful choice for a dinner party. I drizzled it with a touch of aged balsamic.
     
  4. I made a double batch of this for a dinner party and put it on a bed of lettuce. It was very good - even better was that I threw the leftovers in some cooked pasta. It was delicious both hot and cold.

Just made this salad for dinner tonight and, though it's only set for an hour, it's already very good, though I think next time I'll add some chopped shallot or red onion to give it a bit of kick. Some hints: blanch asparagus in boiling water for 3 minutes. Also, for one bunch of asparagus, don't need nearly 1 lb of tomato (used @ a cup of 1/4ed grape toms) or 1/2 lb of feta (maybe 1/2 cup). Could also cut back on vinegar -- seems there's A LOT of juice in bottom of bowl. Easy to tweak and make even better, but a great start as is!

  1. Awesome stuff. I used green beans instead of asparagus because I had an overabundance of tomatoes and green beans.
