“Seafood and salad - the perfect addition to any outdoor BBQ event in summer. Allow 1 hour to chill prior to serving. Marinara mix is a mixture of prawns, mussels, fish and calamari - it can be bought at any good fish monger.”
1hr 30mins

Ingredients Nutrition

  • 250 g pasta, pre cooked (any shape will do, macaroni, penne etc)
  • 2 tablespoons oil (I like olive)
  • 500 g good quality fresh mixed seafood (called a Marinara mix in Australia)
  • 250 g cherry tomatoes, halved
  • 12 kalamata olives, sliced
  • 4 spring onions, sliced
  • 2 tablespoons white balsamic vinegar
  • 1 tablespoon tomato paste
  • 14 cup good quality olive oil
  • 14 cup Italian salad dressing
  • 14 cup chopped parsley

  1. Place the oil in a non stick fry pan (or Wok) and heat the oil. Add the seafood mix and cook over a medium heat until the seafood changes colour.
  2. In a large bowl add the cooked pasta shapes and the cooked seafood mix. Add the cherry tomatoes, olives and spring onions.
  3. In a bowl whisk together the vinegar, oil, salad dressing tomato paste and parsley. Pour over the pasta mix and stir well.
  4. Place in the fridge to chill for atleast an hour.
