Autumn Salad With Red Wine Vinaigrette

"I'm posting this recipe as written in Cooking light, Oct. 2007. However, when I made it I wasn't in the mood for so much fruit, or even the tart/sweet fruit. So I used 4 bosc pears. We loved this salad."

  • Combine first 9 ingredients in a bowl, stirring with a whisk.
  • Combine salad greens, romaine lettuce, Asian pear, apple, and red onion in a large bowl. Drizzle with vinaigrette, and toss well to coat. Sprinkle with crumbled goat cheese.
  • Serve immediately.

  1. Great salad dressing - nice and tart the way we like it. Because I served this salad with spaghetti, I left off the fruit and added tomatoes. Hope you don't mind. I still plan to make this again using all ingredients. We loved the addition of the goat cheese. YUM!
     
  2. I have never tried apples and pears with a vinaigrette before and I’m hooked! It was SO GOOD! Honestly, I was shocked by how much I enjoyed this salad. Will definitely make again. I made as directed except I omitted the cheese.

  5. The vinaigrette is fabulous. I added an extra tablespoon of sugar because I like mine slightly sweet. I served it over mixed salad greens and feta cheese. I'm sure it would be great with pears and apples, too, but I didn't have any! Thanks!
