Avgolemono Sauce

"Adopted! Goes with the already posted "Avgolemono Soup (Chicken Soup)" recipe. As Cookgirl says, an onion? I don't know what the intent of the original poster was, but I don't use any onion. Thanks, CG, for bringing it to my attention!"

  • Mix a little flour with the lemon juice then add the eggs and beat well.
  • Slowly add the broth while continuing to beat.
  • Pour and mix the avgolemono sauce into your food.
  • Remove from heat before the sauce thickens.

  1. First, I warmed the broth, whisked in about 1 tablespoon of flour then added a bit of warmed broth to the eggs. Quickly whisked the eggs so they wouldn't curdle then added to the pot, whisking constantly for about 5-6 minutes until sauce was slightly thickened as a topping for Recipe #316. I have no idea what I was supposed to do with one whole onion...???
