  • Bake potatoes, in oven at 350 for 1 hour 30 minutes. Cool, peel and shred.
  • In a large bowl combine dried onion, sour cream, cream cheese, butter, shredded cheese and seasonings. Mix in shredded potatoes until well combined.
  • Take an ice cream scoop and dip out mixture and roll into a ball. Roll the potato ball in Parmesan cheese/Cornflake mixture until well coated and place on a cookie sheet.
  • Bake in 425 degree F oven for 30 to 35 minutes until lightly browned. Continue making balls until all mixture is gone.
  • I bake all the potato balls. Cool and then place in the freezer. To use, if you choose to do it this way, then just cook the frozen potato balls on cookie sheet in oven at 350 for 45 minutes or heat in the microwave. These are delicious, and a family favorite.

  1. A little confused with the baking instructions........recipe says to bake first and place in freezer. Then it says to cook frozen balls @ 350 for 45 minutes or heat in microwave. Sound like you are cooking them twice?? If is this is the case they would be toast and dry. i believe that you could freeze the balls uncooked and then cook them when needed. .or cook the balls, then freeze and reheat. Would appreciate a clarification. Thanks much! Susan

  1. I LOVE this very versatile recipe! It's very forgiving (you don't have to have the exact amounts of any one ingredient). Another reviewer said they were dry and had little flavor - I disagree. Some people like more or less salt, pepper, onion, or whatever. Use some instinct to get the texture and flavor right by adjusting the amounts of sour cream, cream cheese, etc. <br/><br/>For the crust I used Italian-flavored Bread Crumbs since I didn't have the cereal in my pantry. "Salt & Pepper to Taste" I always say - the recipes try to give you a general idea of how much to use. I don't care for a lot of salt but I do like pepper. I thought the amounts were a good starting point. <br/><br/>I also baked them on either parchment paper or a well-seasoned baking stone and had no need to "oil the crap out of your baking pan" as one reviewer suggested. <br/><br/>You can use leftover mashed or baked potatoes too - whatever you have on hand. I bet you can even make them from instant mashed if you wanted to. These are fantastic to freeze and re-heat whenever you need them, so that is another big bonus in my opinion.
     
  2. These were pretty good. Seemed to be lacking some flavor, I think I'll add some salt next time. 8 large baking potatoes was a little vague. How big is big to you? I used 12 very small potatoes, microwaved them instead of baking them. I added a little mozzerella to the sharp chedder since I had a few oz left. I rolled these in fresh shredded parm and toasted breadcrumbs. Baked up beautifully. A little dry but I may have just had too much potato. Will try again!
     
  3. I wouldn't really call these augratin potato balls, I'd more call them potato latke's. Very dry, not much for flavor, you barely even notice any cheese inside. <br/><br/>Need much seasoning and could use a little less onion. I'd suggest next time to use at least twice as much cheese, and thickly shredded, not finely. <br/><br/>Definitely oil the crap out of your baking pan. (I don't know why this wasn't in the recipe?) Would also suggest like an egg wash if you want a thicker outter shell of the breadcrumbs and parmesan. <br/><br/>Also noticed what a pain it is to peel your potatoes soon after cooking. I refrigerated mine after cooking to make it easier to peel and shred.

I Love to cook just about anything. I am not much of a baker because we do not eat many sweets, but I will try new recipes from time to time. I have a small bread machine (west bend - Just for dinner) so I make fresh breads in that to go with our meals. My favorite things to cook are those that you can take something like steak,Pork,chicken,roast,turkey,ground beef,shrimp etc... and make it into a delicious meal.
