Ingredients Nutrition

  • 1 tablespoon butter
  • 6 large eggs, lightly beaten
  • 8 ounces sliced mushrooms
  • 6 croissants, split (5-inch croissants)
  • 4 ounces baby swiss cheese, cut into thin slices
  • 6 slices bacon, cooked
  • 2 tablespoons chopped fresh chives

Directions

  1. Preheat broiler with rack set 3-5 inches from heat.
  2. In a large nonstick skillet, melt butter over medium heat.
  3. Saute eggs and mushrooms for 3 minutes or until eggs are scrambled.
  4. Place croissants on a work surface.
  5. Top each croissant half equally with egg mixture, Swiss cheese, and bacon.
  6. Place open-faced croissant halves on a broiler pan and broil for 2 minutes or until croissant is slightly toasted and cheese is melted.
  7. Garnish with chives.
