Baked Celery

"By my recollection, this dish is very similar to one my Irish grandmother cooked. Cooked celery as a side-dish vegetable seems to be out of vogue now, but it really is quite good."

  • Preheat oven to 350F degrees.
  • Separate celery into stalks, remove leaves (save for soup) and trim, wash well and cut into pieces about 3/4-inch thick.
  • Place celery in an ungreased casserole dish.
  • Dice bacon; add bacon and sliced onion to casserole, atop the celery.
  • Sprinkle all with fresh parsley.
  • Combine stock and water (or just use all stock) and pour over dish; don't stir.
  • Dot casserole with small bits of butter.
  • Cover dish and bake for 30 to 45 minutes, or until celery is cooked but not mushy.

  4. Imade this using 1/2 bunch of celery. I should have halfed the liquid ingrediants also. The celery was crispy tender and the onions added a nice flavor. I will make this again.
     
  5. This was nice. Thank you. Made a few changes like adding more bacon, and had to use italian herbs instead, which has parsley in there amongst others, as I didn't have any parsley on its own.

Tweaks

  1. The only change I made was to use bottled parsley flakes instead of fresh parsley. This was a different side dish and a good way to use up some celery. I wasn't crazy about the appearance of the bacon after cooking. If I make it again, I think that I'll leave it out until serving and top the celery with cooked and crumbled bacon. Thank you for posting this recipe.
