  1. A family favorite. I omit the red pepper and double the cheese. Reserve a half cup or so of cheese to top with for the last five minutes or so of cooking. Also, I use a nice sharp cheddar. Update: Something else I wanted to add was that this makes a great breakfast a day or two later. Put leftovers in the refrigerator overnight. Cut slices about an inch thick. Heat butter in a pan and fry the slices, turning once. You get a great crisp texture and still creamy and yummy inside, like soft cornbread.

  2. The texture seemed too runny in step 4, so I added an extra 1/2 c. grits. This is the same ratio in the directions on the package of quick grits. The dish did not set up as firmly as I was hoping for. Not enough cheese. Not enough salt.

  3. Sounds great even with the 339 calories per serving.

  4. I made this lovely comfort food dish with my sister for mother's day. None of us had had baked grits before and I'm glad that this was our first experience with it. I used an extra egg and I think it had a delicious texture. Thank you!

  5. I fixed this for Hubby for dinner late last noght. About all I had in the house was grits, cheese and eggs. He thought I'd planned this. It's his idea of comfort food! It's ideal for a cold, drizly winter night. I usually have all the ingredients on hand. It's so easy, and the leftovers make a great lunch. I wonder how often I can get away with serving it...
