A family favorite. I omit the red pepper and double the cheese. Reserve a half cup or so of cheese to top with for the last five minutes or so of cooking. Also, I use a nice sharp cheddar. Update: Something else I wanted to add was that this makes a great breakfast a day or two later. Put leftovers in the refrigerator overnight. Cut slices about an inch thick. Heat butter in a pan and fry the slices, turning once. You get a great crisp texture and still creamy and yummy inside, like soft cornbread.

I fixed this for Hubby for dinner late last noght. About all I had in the house was grits, cheese and eggs. He thought I'd planned this. It's his idea of comfort food! It's ideal for a cold, drizly winter night. I usually have all the ingredients on hand. It's so easy, and the leftovers make a great lunch. I wonder how often I can get away with serving it...
