Ingredients Nutrition


  1. Place chicken in a shallow roasting pan, skin side up.
  2. Add 1/3 cup water; dot with butter.
  3. Season with salt and pepper to taste.
  4. Bake in 350 degree oven for 1 hour.
  5. Fifteen minutes before chicken is done, bring 2 quarts of water to boil, stir in orzo, salt and oil.
  6. Parboil 5 minutes.
  7. Drain orzo in colander; rinse in cold water.
  8. Remove baked chicken from oven; place in dish.
  9. Cover tightly with heavy-duty foil; set aside.
  10. Turn oven to 425 degrees; add 1 cup of water and broth to roasting pan; stir to loosen drippings.
  11. Add tomato paste, salt, pepper and orzo.
  12. Bake 30 minutes or until orzo has absorbed liquid and is tender.
  13. Salt to taste; sprinkle with cheese and yogurt.
  14. Serve with baked chicken.
