Baked Cognac Carrots

"A simple way to make the humble carrot more sophisticated. If you don't have cognac on hand, brandy will suffice."

  • Preheat the oven to 350 degrees F.
  • Combine the butter, sugar and salt in a large shallow baking dish.
  • Stir in the carrots and pour the cognac over top.
  • Cover and bake for 45 minutes to 1 hour or until the carrots are done as you like.
  • Stir in the grapes and serve.

<p>I live with my husband, four cats, and a sweet mutt named Jada in Scarborough, Ontario, where I work as an elementary school administrative assistant. I have a 31 year old daughter who lives with her boyfriend in nearby Don Mills, along with my sweet granddogs, Frankie and Turbo.
