Baked Cognac Carrots

- 1⁄4 cup butter, melted
- 1 teaspoon granulated sugar
- 1⁄2 teaspoon salt
- 6 cups carrots, cut into 2-inch pieces
- 1⁄4 cup cognac
- 1 cup green seedless grape
directions
- Preheat the oven to 350 degrees F.
- Combine the butter, sugar and salt in a large shallow baking dish.
- Stir in the carrots and pour the cognac over top.
- Cover and bake for 45 minutes to 1 hour or until the carrots are done as you like.
- Stir in the grapes and serve.

<p>I live with my husband, four cats, and a sweet mutt named Jada in Scarborough, Ontario, where I work as an elementary school administrative assistant.
