  • Preheat oven to 400F degrees.
  • In a medium bowl, combine beans, onion, garlic, oil, salt and pepper.
  • Place mixture in an ungreased 13x9-inch baking pan and top with tomatoes, feta cheese, basil and oregano.
  • Bake, uncovered, for 30 minutes or until tender.

  1. Wonderful alternative to plain beans. Definately a keeper.
     
  2. I used a pint of grape tomatoes, that I halved. I baked the veggies for 15 minutes then added the feta and two 5 ounce salmon filets that had been topped with olive oil, minced garlic, salt and pepper. Continued baking for an additional 15 minutes. It was delicious.

Tweaks

  1. This was delicious!! A great way to get my bf to eat his veggies!! I did add half a chopped red bell pepper, and used half a jar of sun dried tomatoes in oil instead of regular tomatoes. And I used dried herbs (about 1 tsp) as I did not have fresh. Two thumbs up.
