Baked Mackerel

"Mackerel is one of the easiest fish for us to catch here in Maine so I am always on the lookout for a new recipe. This is one I want to try soon. The recipe calls for 2 2-lb mackerel, but we usually catch smaller ones. I think just adjusting the baking time would allow for me to use smaller fish."

  • Preheat oven to 400 degrees.
  • In a saucepan over low heat combine all ingredients except for the fish.
  • Cook over low heat for about 20 minutes.
  • Remove the bay leaf.
  • Place fish in a baking dish and pour the sauce over the fish.
  • Bake for 30-40 minutes.

  1. I tried this recipe last night. I used red wine vinegar, omitted the parsley because I didn't have it and substituted dried tarragon for the thyme. It turned out fantastic!!! The tartness of the vinegar offset the oiliness of the fish nicely without being too tart. In my opinion, this would be great served with rice, couscous or quinoa. A definit addition to my repertoire.
     
  2. Kim you are fortunate to be able to catch mackerel locally. Here on the shores of Lake Ontario that is impossible! I reduced the quantities for two, and the fish were relatively small. I cut down the cooking time as well. You do not indicate what type of vinegar to use. I opted for plain white, and was surprise to find the "sauce" soaked up all the vinegar. When cooked I placed it on top of the fish. It was really a different taste which was what I was looking for. We added baked beans and a small cole-slaw. It was an enjoyable meal.
