  • Melt butter on medium heat in stock pot.
  • Add onion and saute for 2 minutes.
  • Sprinkle flour over the onions and cook 3-5 minutes, stirring often.
  • Gradually add chicken broth.
  • Add potatoes, salt, and pepper, bring to a boil, then simmer 20 minutes or until potatoes are tender.
  • Stir in heavy cream, 3 oz. bacon pieces and 1/2 Cup of cheddar cheese then heat through.
  • Garnish with cheese, sour cream and bacon.
